5-ingredient Mango Mochi Bites

Made with sweet and juicy mango slices covered in a chewy mochi, these mango mochi bites make for a light and refreshing treat!

When I tell you I’ve seen this recipe everywhere, I mean everywhere. It’s like all of Instagram and TikTok wanted me to make mango mochi. So, of course, I had to try it.

What is Mochi?

In general, mochi refers to a Japanese sweet rice dough made from glutinous rice flour. It can be filled with anything from ice cream to red bean paste, but for this recipe, we’ll obviously be using ripe mangoes!

Ingredients for Mango Mochi

Mochi is extremely simple to make—the dough itself only needs 4 ingredients.

    • Glutinous rice flour. The main component of mochi dough is the rice flour—and I can’t emphasize enough that it must be glutinous rice flour, otherwise your mochi will not have its trademark chewy texture. You can buy it on Amazon, like I did, or you could try to find it in your local Asian supermarket.
    • Granulated sugar. Sugar gives the mochi a light sweetness, but it’s not overpowering.
    • Water. Water is mixed with the rice flour to create the dough.
    • Cornstarch. Once the dough is made, it will be extremely sticky. Cornstarch helps to roll out the dough without it sticking to your countertop and rolling pin.
    • Mangoes. Be sure to use ripe mangoes, since this is the ingredient that gives the mochi both its sweetness and flavor.

How to Make Mango Mochi

This process will seem a bit odd, but I promise you, it’ll work!

  1. Make the mochi dough. In a bowl, you’ll mix the rice flour, sugar, and water. After covering it with a plate or plastic wrap, you’ll microwave the mochi in 1 minute increments until it becomes thick and extremely sticky, then you’ll set it aside to cool.
  2. Prepare the mango. For this recipe, I peel and slice my mango into 8 pieces. I prefer smaller mochi bites, but feel free to make them as large as you like!
  3. Roll and shape the mochi. Once your mochi dough has cooled, place it on a piece of parchment that is heavily dusted in cornstarch. Divide the dough into 8, then roll it thinly and wrap each bit of dough around a slice of mango. Once formed, enjoy the mochi the day of!

Ingredients

  • ½ cup glutinous rice flour
  • 2 tablespoons granulated sugar
  • ½ cup water
  • Cornstarch (for rolling)
  • 1 to 2 mangoes

Instructions

  • In a medium bowl, mix the rice flour and sugar until combined, then stir in the water until smooth.
  • Cover the bowl with a plate or plastic wrap and microwave for 1 minute. Stir the mixture, then microwave it for 1 minute. Stir the mochi mixture once again and microwave it for 30 seconds, until thickened and very sticky. Set the mochi in the fridge for 30 minutes to cool.
  • Peel and slice the mangoes into 8 cubes around 1 inch wide. Heavily dust a piece of parchment paper with cornstarch and divide the cooled mochi into 8 pieces.
  • Dust a rolling pin with cornstarch. One at a time, roll out the mochi pieces into a circle large enough to enclose a cube of mango.
  • Place the mango in the center of the rolled out mochi, then wrap the mochi up and over the mango, pinching it to seal. Repeat with the rest of the mangoes, dust the mochi with cornstarch if needed, then serve the day of (refrigerating mochi will dry them out).
