The Ultimate Double Chocolate Skillet Brownie

You guys. I cannot tell you how good this skillet brownie was—it’s the perfect chocolatey dessert for Valentine’s Day or when you have friends and family over. Top the brownie with some ice cream, have everyone’s spoons at the ready, and watch as it gets devoured once placed on the dinner table.

Ingredients to Make a Skillet Brownie

One of my favorite things about this recipe is how easy it is! These brownies are made of just 10 ingredients, most of which you’ll have on hand.

  • Unsalted butter
  • Semisweet or milk chocolate
  • Granulated sugar
  • Brown sugar
  • Eggs
  • Vanilla
  • All-purpose flour
  • Cocoa powder
  • Salt
  • Chocolate Chips

What to Serve With a Skillet Brownie

Another thing I love is how customizable you can make your brownies! Feel free to add any toppings you like, but here are my favorites:

  • Vanilla ice cream
  • Flaky salt
  • Caramel sauce
  • Chocolate sauce
  • Whipped cream
  • Chopped, toasted nuts
  • Fresh berries

Tips for Making This Double Chocolate Skillet Brownie

  • Whisk the melted chocolate and sugar together while hot. Most recipes call for ingredients to be room temperature when baking, but for this one, it’s actually best for your melted butter to be warm when you add the granulated sugar to it! By doing this, you ensure that your brownie’s will get a nice, crackly top.
  • Underbake the brownie. Cast iron skillets retain heat very well, so even after you take the brownie out of the oven, it will continue to cook! I’ve found that 35 minutes is the perfect baking time for me. The center may still be gooey when you test it with a toothpick, but it will set as it cools. You can also check with a thermometer, which is really easy and accurate. If you go that route, aim for the 185-190 degree range.
  • Serve with ice cream. I mean, I don’t know how much I really need to explain this one. Brownies are so rich and fudgy that a nice vanilla ice cream will really help to lighten the flavor (and also cool off the brownie once it’s out of the oven).

Ingredients

  • 7 tablespoons unsalted butter (melted)
  • 2.75 ounces milk or semisweet chocolate (chopped)
  • cup granulated sugar
  • cup light brown sugar
  • 2 eggs (at room temperature)
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • tablespoons cocoa powder
  • ½ teaspoon salt
  • cup semisweet or milk chocolate chips
  • Vanilla ice cream (for serving)

Instructions

  • Preheat the oven to 350°F. Lightly grease a 6'' cast iron skillet with butter and set aside.
  • In a large bowl, sift together the flour, cocoa powder, and salt. Set aside.
  • In a microwave-safe bowl, melt the butter. Add the granulated and light brown sugar to the butter, whisking until well incorporated. Crack the eggs in one at a time, then add the vanilla. Whisk the mixture until it is smooth and has lightened slightly in color.
  • In a small bowl, melt the chocolate in the microwave (or over a double boiler). Pour the melted chocolate into the egg and sugar mixture, then whisk well.
  • Pour the dry ingredients into the wet ingredients, add in the chocolate chips, and fold everything until just combined.
  • Pour the brownie batter into a 6'' cast iron skillet and bake in the oven for 35-40 minutes. If you insert a toothpick into the center of the brownie, it's okay if there's some brownie residue, as it will continue cooking in the pan.
  • Remove the skillet from the oven and let cool for 5-10 minutes. Top with flaky salt and ice cream. Serve immediately.
