Peanut Butter Stuffed Snickers Dates

A perfect balance of salty and sweet, these dates are stuffed with creamy peanut butter, dipped in dark chocolate, and sprinkled with flaky salt for an easy and healthy treat!

Sometimes after dinner, I want a little something sweet without being too indulgent or unhealthy, and these Snicker’s dates fit the bill! It’s the perfect bite—crunchy dark chocolate, fudgy dates, and a creamy peanut butter filling. While it’s not a Snicker’s bar, I have to admit that the taste and texture is similar and delicious nonetheless. What’s even better, they only use 4 ingredients and take less than 20 minutes to put together!

Ingredients for Snicker’s Dates

For this recipe, you’ll only need 4 things:

  • Medjool dates. Medjool dates give this recipe its signature chew and sweetness.
  • Peanut butter. My absolute favorite brand of peanut butter is Smucker’s Natural, but you can use any brand you prefer!
  • Dark chocolate. You can use milk or semisweet, but dark chocolate is my favorite.
  • Coconut oil. This will thin the chocolate and give you a perfectly smooth coating.
  • Chopped nuts (optional). Chopped nuts—peanuts, almonds, cashews (which I used)—give a satisfying texture and crunch.
  • Flaky salt (optional). I always love a healthy pinch of salt on my desserts—it adds texture and flavor while also balancing out the sweetness!

How to Store Snicker’s Dates

  • In the fridge. Keep the dates in an airtight container in the fridge for up to 1 week; they will have a softer consistency stored this way.
  • In the freezer. Store them in an airtight container in the freezer for 1-2 months; compared to being stored in the fridge, these dates will have a crunchier chocolate coating and fudgier date texture.

Ingredients

  • 10 medjool dates
  • 3 tablespoons peanut butter my favorite is Smucker's Natural
  • Chopped peanuts or cashews optional
  • 4 ounces dark chocolate roughly chopped
  • 1 teaspoon coconut oil
  • Flaky salt optional

Instructions

  • Cut a slit into each pit lengthwise, then remove the pit.
  • Fill the dates by piping or spooning in around 1 teaspoon of peanut butter, then sprinkle on the chopped nuts (if using). Close up the dates and set them in the fridge while you prepare the chocolate.
  • In a heat-safe bowl, melt the chocolate in the microwave for 30 seconds at a time, stirring after every interval until smooth. Add in the coconut oil and mix until well combined and glossy. If the mixture is too thick, add coconut oil a little at a time.
  • Line a sheet with parchment paper and set aside. Take the dates out of the fridge and dip them, one at a time, into the chocolate mixture until fully coated. Place the dates onto the parchment-lined sheet and top them with a sprinkle of flaky salt, if using.
  • Let the dates set in the fridge until the chocolate hardens, around 10 minutes. Store the dates in the fridge for up to one week or 1-2 months in the freezer.
