Cajun Salmon Bowls with Spicy Mayo

Easily my go-to dinner, these Cajun salmon bowls are so simple; squares of salmon are tossed in spices, roasted, then topped with diced avocado, edamame, and spicy mayo for the ultimate weeknight meal.

If I have to come up with a meal idea on the spot, there’s a big chance it will be a rice bowl. They’re easy, customizable, and so delicious, but these salmon bowls are on a whole other level. No lie, this is one of the most requested dinners in my house, even by my brother, who is one of the pickiest eaters I know. It’s simple, it’s quick, it’s easy, and it’s one of my most repeated recipes.

What You’ll Need

  • Salmon fillets. Salmon is the basis for the recipe—I like to use skinless fillets to save time.
  • Olive oil. Olive oil helps the seasoning stick to the salmon and cook evenly.
  • Cajun seasoning.
  • Garlic powder.
  • Smoked paprika.
  • Pepper.
  • Mayonnaise. Kewpie mayo would be best to use, but a good quality mayo like Duke’s or Hellman’s will be just fine.
  • Sweet chili sauce. Don’t skip the sweet chili sauce! It makes the spicy mayo and gives it a much deeper flavor.
  • Sriracha. Sriracha ups the spiciness in the sauce—I like to use 1 tablespoon for a mild kick, but feel free to add more to your preference.
  • Rice.
  • Edamame, avocado, sesame seeds. And any other toppings you’d like!

Ingredients

For the salmon:

  • 4 salmon fillets around 1 pound, cut into bite-sized cubes
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning such as Old Bay
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper

For the spicy mayo:

  • ½ cup mayo
  • cup sweet chili sauce
  • 1 tablespoon sriracha

To serve:

  • 2-3 cups cooked rice
  • 1-2 avocados sliced
  • Edamame
  • Sesame seeds

Instructions

  • Preheat an air fryer to 350 degrees. Pat the salmon dry with a paper towel. In a bowl, mix the cubed salmon with the olive oil, Old Bay, garlic powder, paprika, and black pepper until well combined. Let the salmon marinate for 30 minutes or cook right away.
  • Air fry the salmon for 7-8 minutes, flipping them halfway through. Alternatively, you can cook the salmon in a skillet with a bit of olive oil. Meanwhile, mix together the mayo, sweet chili sauce, and sriracha and set aside.
  • To assemble the salmon bowls, top the rice with the cooked salmon, avocado, edamame, and sesame seeds, if using. Drizzle over the spicy mayo and serve.
