Preheat an air fryer to 350 degrees. Pat the salmon dry with a paper towel. In a bowl, mix the cubed salmon with the olive oil, Old Bay, garlic powder, paprika, and black pepper until well combined. Let the salmon marinate for 30 minutes or cook right away.
Air fry the salmon for 7-8 minutes, flipping them halfway through. Alternatively, you can cook the salmon in a skillet with a bit of olive oil. Meanwhile, mix together the mayo, sweet chili sauce, and sriracha and set aside.
To assemble the salmon bowls, top the rice with the cooked salmon, avocado, edamame, and sesame seeds, if using. Drizzle over the spicy mayo and serve.
